Very Berry Honey Wheat Ale

Perfect for summer or for the fruit beer lover

Ingredients:

· 2 x 3.3-lb cans Coopers Wheat Malt Extract

· 1-lb 10L crystal malt

· 1-lb clover honey

· ¼-lb flaked wheat

· 1 oz Styrian golding hops (bittering)

· 1 oz liberty hops (finishing)

· 1 tsp Irish moss

· 3 oz raspberry extract

· White Labs WLP001 California ale yeast

· ¾ cup corn sugar (priming)

Procedures:

1. Steep the cracked grains in 1½ gallons of 150-180 degree water for 15-20 minutes

2. Remove the grains, stir in the malt extracts and flaked wheat, and raise to a boil

3. After hot break, add the bittering hops and continue boil for another 45 minutes

4. With 15 minutes remaining in the boil, add the Irish moss

5. With 5 minutes remaining in the boil, add the aroma hops and honey

6. Strain the wort into a clean and sterile fermenter

7. Pitch the yeast when the temperature falls below 75 degrees

8. Ferment for 7 to 10 days

9. Boil the priming sugar in a pint of water until dissolved

10. Add the sugar solution and fruit extract to a clean and sterile bottling bucket

11. Siphon the wort into the bottling bucket and bottle normally

12. Condition for 2 to 4 weeks
